I am food obsessed. I write about food, teach about food, cook every day, even dream about food. I've published 30 books including academic monographs, single subject food histories, encyclopedias, cookbooks, translations and other reference works including my latest Atlas of Fermentation. I also edited about 100 books in several series for many different publishers. I've done 3 lecture series for The Great Courses on food history and the history of cooking with a new one coming soon on Forgotten Foods. Ken Albala is Tully Knoles Endowed Professor of History at the University of the Pacific and winner of the 2023 Distinguished Faculty Award. His Beans: A History won the 2007 IACP Jane Grigson Award in Food Writing.
